Barbecuing ribs on a charcoal grill requires patience, indirect heat, and stable temperature control. Pork ribs should not be cooked directly over strong flames for a long time, because the outside can burn before the connective tissue becomes tender. For most rib cooking, a charcoal grill temperature of 225°F to 275°F is a practical range for low and slow barbecue.

USDA food safety guidance states that pork should reach at least 145°F with a 3-minute rest for safe consumption. However, ribs usually become more tender at a higher internal range, often around 195°F to 203°F, because collagen softens more fully at this stage. This is why charcoal airflow, lid control, and heat zone planning are important for consistent results.

Use Indirect Heat For Better Rib Texture

Place charcoal on one side of the grill and put the ribs on the cooler side, away from direct flame. This creates indirect heat and helps the ribs cook slowly. Keep the lid closed as much as possible, because opening the grill too often releases heat and makes the cooking process unstable.

Before grilling, remove the membrane from the back of the ribs, dry the surface, and apply seasoning evenly. During cooking, check the color and moisture every 45 to 60 minutes. Sauce should be brushed on near the final stage, usually during the last 15 to 30 minutes, because sugar in barbecue sauce can burn quickly over high heat.
